Where a propane torch earns its keep

The tank is the other half

Our torch is a head, not a kit: it screws onto the standard propane tank sold at any hardware store, the same cylinder a camp stove takes. The tank is not in the box, on purpose. Most garages own one already, and the ones that do not are a short errand away.

Threaded on, the head meters the tank down to a flame you steer with a trigger and shape with a dial. Off again in seconds, the tank goes back to the stove.

Charcoal without the ritual

Lighter fluid works by soaking the coals in something you then taste. A torch works by holding flame on three or four spots until they glow, which takes a few minutes and adds nothing to the food.

The same trick starts a fireplace on a cold flue and revives a campfire after rain, when kindling is damp and patience is gone. Flame goes where the trigger points, for exactly as long as it is held.

The sear at the end

A steak cooked low and slow arrives tender and gray. The crust comes from surface heat the oven never reached, and the torch supplies it directly: full flame, moving passes, a minute a side. The dial matters here, since the same head that roars over charcoal turns down to kitchen work.

At the top of its range the flame runs to 3272 F, which is more than any sear needs. The point is not the peak. It is that the whole range sits under one thumb.

How the trigger is arranged

The trigger stays dead until the lock ahead of it is pressed, so a hand around the grip decides when there is flame, and carrying the torch across the yard is just carrying it. A separate button jumps to full fire for the charcoal minutes and drops back when released.

Between jobs the head comes off the tank and lives on the shelf. Screwing it off takes as long as screwing it on, and a bare tank stores the way tanks are meant to store.
